O Brother, Where Art Thou? Is probably one of my favourite movies ever. I'll also go with Fargo and No Country For Old Men.

Yes, Blood Simple is amazing. Love that movie.

Top 3 was pretty much a huge toss up for me.

Love all their movies other than Intolerable Cruelty (doesn't even really count since they didn't write it) and O Brother Where Art Thou.

My rankings!!!!:

Barton Fink
The Big Lebowski
Fargo
Blood Simple
The Man Who Wasn't There
Miller's Crossing
No Country For Old Men
The Hudsucker Proxy
Burn After Reading
Raising Arizona
The Ladykillers
O Brother Where Art Thou?
Intolerable Cruelty

They had a short in the movie "Paris, Je T'aime" with Steve Buscemi that was the best part of the whole movie also.
