For example, Sully Erna (Godsmack) Used to be a drummer (Meliah Rage).
Any interesting / unusual changes?

Back when I saw Metallica (Black album tour) James Hetfield played drums in a "battle" against Lars Ulrich...

Guster had a thing on stage where everyone played an instrument they had never previuosly played (In Guster). It was weird.

All the changeovers I know of are pretty dull bass to guitar (or vice versa) swaps...

Dan Swanö has done everything.
Vintersorg has done everything but drums [drum programming, though].
Jesper Stromblad played drums in Hammerfall, bass in Dimension Zero, and guitar in In Flames.
Eddie Van Halen started out as a drummer. Alex was better, so Eddie picked up the guitar.
Janne Warman played drums before Children of Bodom.
Abbath played drums in Immortal when they were looking for a replacement.

If KoRn swapped instruments, it could only enhance their performance...

I know there are more examples I should be able to name. The Erna bit's something I know from my father, who researches New England music groups.

When I saw them live, Sully got on the drums and did a solo, he is really good actually. I also hear that the first Godsmack album was him playing all the instruments, but I might be wrong..

Don't forget drums for Tenacious D.
Anyways, I believe Kurt Cobain played drums when Nirvana was just getting started.
