I feel like a double turn can be achieved in one match/moment, but there needs to be a setup and development going into it.
It's kind of hard to pull something like that off with a couple weeks build. A double turn like Austin/Bret had months of events from kayfabe/real life that culminated in that match. The crowd is also a factor, and I just don't think the crowd is at a point where they're clammoring for Sheamus and ready to turn on HHH.
With that being said, the best scenario I can offer for something like this to possibly work, given the current circumstances, would be a fighting spirit angle.
Sheamus would cut a backstage promo before the match about how tonight is his night, and he owes it to himself and his generation to beat HHH, and do it decisively and cleanly. No more flukes.
The match goes off as planned, and Sheamus continually fights back. Nothing HHH can do can beat him. He begins to attempt dirty tactics. Still, Sheamus won't stay down.
Sheamus fights and scratches, but finally HHH puts him down with the sledgehammer and gets himself disqualified. He tries to dismantle him, and Sheamus keeps defying him.
When the crowd turns, HHH gets on the mic and argues that this is what they've always wanted. He comes off as a dirty player, and a zealot, and Sheamus looks like a million bucks.
That's really me just humoring the idea though. I don't know if that would all work out that way, and I don't know where it would go from there. I don't know how well accepted Sheamus would be as the heroic babyface from there on out.

This is too easy, even without build. It's Trips/ The Glass Ceiling we're talking about...
Book the match as Jeritron stated, or even a clean match... I could see it playing out something like this:
First 15 or so minutes the match is clean as can be, and back and forth, nobody really getting the upper hand. Hunter is clearly getting upset by this point, as he's usually pretty dominate in the ring. He slowly starts using his underhanded tactics more and more. Every heelish act gains him a little bit more ground, but still Sheamus wont go down. HHH is pissed by this point, and causes Sheamus to take out the ref. A low blow later H takes him to ringside, and out comes the sledge. Hunter decimates with his hammer, then destroys ringside with what's left of the celtic warrior. Back to the ring as the ref is coming to, and it's the Pedigree followed by a quick pin.
(Assuming he calls Mania) Good ol' JR: HE KICKED OUT! HE KICKED OUT! HE KICKED OUT!
Trips goes nuts and goes after the ref, but Sheamus is up, staggering around just long enough to intervene with the cross. Ref counts the 3 for the upset victory. Sheamus gets his bearings and gets a little revenge for the beatdown before refs and security come out and break it up, escorting The Game to the back. The Celtic Warrior gets on the mic and announces that he knew that that was exactly what it would take to put HHH down at Mania.
Don't know how well this would work out in the PG era, but the key thing to remember here is it's the cerebral assassin we're talking about here. With his history, a turn could come at any time, and against anybody.

This is Trips, he doesn't have to get on the Mike at all. Let all actions speak.
Sheamus has reality check. Realizes that he's the new generation and has a responsibility to do more than he has. He's got a proud heritage, and has made WWE history with his title victory. He should act more like the role model HHH shown him that he is. Match goes and goes, Sledge Hammer, Pedigree, Kick out and then....Shawn Michaels Run in. Shawn distracts the ref, more Hammer, HHH disracts the ref, SCM, pin and major beatdown afterwards, only stopped by a run in from another Face up and comer LIKE KOFI. Kofi makes moderate save, only to catch SCM and you get the HBK and HHH with the handshake dissolving DX, but keeping their friendship on the dark side.

Sheamus is supposed to win, it's one of the criteria...

I want to see Sheamus get the win and a nice rub from Trips. On the double turn, hell I dunno, put the match after McMahon/Hart, and let McMahon come out and then help Triple H, declaring war on RAW and getting his title back. After Triple H wins the title from Cena (due to McMahon) Sheamus comes out and can talk about how Triple H robbed him of his first experience at Wrestlemania, and robbed him of what mattered to him the most, and now Sheamus is the one who will rob Trips of what matters to him the most, the WWE Championship.
There's summerslam IMO.

The best way has always been suggested. It would best be told through the ring action, through the crowd and conveyed by the announcers. Sheamus needs to make it look like it is "his night." Sheamus needs to start the match firmly, but then Triple H gets control of the match. He plays the heel, setting the pace, but whenever Sheamus makes a comeback, Triple H does some heelish stuff to try and keep the ball in his court. Eventually, we get the strong face comeback, and Triple H is shitting himself. Sheamus wins the match cold and decisively. While Sheamus is celebrating, perhaps have Triple H get out his old sledgehammer, and take it to Sheamus.
As Jeritron said, though -- the crowd may not be ready to cheer Sheamus and boo Triple H. Viewers at home can get an idea of how "reprehensible" Triple H's actions are via whoever is doing commentary, though.

I doubt that Sheamus could get over as a face..... but I said the same about Randy Orton, so what do I know....
