Looks like the release date of December 7th 2010 has been officially confirmed by Blizzard, obviously its subject to change but it looks like they're on course to get it out on time.

I got into beta around this time last month, due to the major issues with the character copy affecting the EU battle.net i wasn't able to immediately get my characters across, so i decided to make a Worgen character, first real Alliance character that i would level.
It was great fun, although the guild perks and reputation stuff was bugged for me, so i didn't get anything out of it for the most part. By the time i was just finishing the Kalimdor side the character copy was up and running again, so mananged to bring my main characters through.
The new zones are certainly pretty challenging, i went with my shaman first due to the levelling utility, there was definately a lot of mobs which hit significantly. They likely won't be a problem for my mage or protection warrior though when i go through.
Uldum was by far the best zone, it was only an issue that i never got any quest rewards as they wasn't yet implemented at the time, so it left me in somewhat trouble once i hit Twilight Highlands.
I made a Goblin character too, what great fun they are. I went through Eastern Kingdoms on him - Hillsbrad is *amazing*.

Haven't really had time to do any instances, but from what i know they're going back to the Burning Crusade model of crowd control is required, whether it stays that way through the expansion is anyones guess...
Slight sidenote is that the new Pre-Cataclysm patch is expected in the next week or two which will bring in the new talents and what not, with ICC still the current raid, it looks like Blizzard are going to be removing the 30% buff, whether that makes it harder i don't know.
Gonna be an interesting 8 weeks or so.
