Either of the Baldur's Gate games. Very fun with coop. Bad actors, but the overall game is fun :)
I'd also suggest the LotR games. Never played them with co-op, but single player was fun as hell.

Rainbow Six 3 is co-op through Live and system link, don't know if you'd go that far though. Return of the King is fun co-op, very old school. Aside from those, I can't think of great co-op titles for XBox.

I'm pretty sure Republic Commando is gonna have Co-op when it's released. I'd wait for that.

DO NOT, I repeat, DO NOT play Tenchu:Return to Darkness in co-op mode. Hell, don't play it at all. One of the worst games I ever wasted renting money on. The graphics aren't that impressive and barely look any better than the regular PS1 version. You can't do anything in the co-op version, the camera is so bad. Just sucks.
BUT...
Serious Sam is quite fun in co-op mode. I love that game. Tons of people talk about how they hate it, but it reminds me of Doom, with some cartoonish type play. Very fast paced and fun game.

Actually, If you're like me, you'll get Halo to see what all the fuss is about, play it for a week, then never touch it again.
