If you're talking about the most bloody/violent/cool to watch, then I'd have to say Kane from the original Alien. The coolest part is that none of the other cast members really knew what was coming.
Spock's death in Star Trek 2 is probably the most well-executed death scene I've watched.
And of course Obi-Wan Kenobi in the original Star Wars is just classic for that "If you strike me down I shall become more powerful than you can ever imagine" angle.
Yeah, I'm a SciFi geek. 'Sides, I don't think shooting deaths are all too interesting.

The Rock and Cliffhanger both have pretty cool deaths in them.
I thought Wesley Snipes in Demolition Man was pretty cool too.
John Travolta...er..Nicolas Cage...er..yea...in Face/Off. Not too special, but a bit unorthodox as well.

The character Kane in the original ALIEN. Having a monster that looks like a 2-foot long dick burst out of your chest and then eat your friends is probably one of the most unsavory ways to die that I could think of.
(And no, I wasn't trying to be immature about the 2-foot dick thing; that was what it was intended to look like)

The girl who gets hit by the bus in the first Final Destination.
The decapitation scene in The Omen, didn't see that one coming.
Plus loads of death scenes in Oz.
My favourite is the Italian boss (can't remember his name) who dies after O Riley and Alabisie? put glass in his food over time.

Although the movie kinda sucked, my favourite death scene is probably from Jason X. The one where he stuck the womans head in the liquid nitrogen, then smashed her face against the table. classic.

Conan O'Brien jumping out the window on to a car in the "South Park Movie"
Decon Frost getting blown up in "Blade"
Azreal's "I'm a ****ing Demon" death was funny in "Dogma"
The Boar's death in the beginning of "Princess Mononoke"
Dante's death in the deleted scene of "Clerks" wasn't necessarly good, but it was unexpected
Simon crashing in the helicopter in "Die Hard with a Vengence" was kinda cool because of how everyone else seemed to not even care
Robert DeNiro gettinmg unexpectedly killed half way through "15 Minutes" was just awesome because it was the most unexpected death I've ever seen.
Coffey's underwater vehical blowing up under the preassure of the water in "The Abyss", that's cool.
Qui-Gon Jin's death was pretty cool for a cartoony death in "The Phantom Menace"
Kevin Bacon getting burned, electricuted and then getting thrown down an elevator shaft in "Hollow Man" was brutal

Hans Gruber dropping from the top of the Nakotomi Building in "Die Hard"
Steve Bushemi getting aquainted with a wood chipper in "Fargo"
Joe Pantelaiano getting killed in the beginning (or rather then end) of "Memento" the only death that I can think of that happened both foward and backwards
The guy in "Pi" putting a drill through his skull have to be in the top 5 deaths on screen of all time.
Brandon Lee shooting that guy with all the pawned rings in "The Crow"
Also Brandon Lee being shot through the window at the beginning of "The Crow"
Phil stealing Punxitonly Phil and then driving off a cliff in "Groundhogs Day" that was a real funny death with Chris Eliott saying "He might be alright" and then the car explodes and then he says "Now, now he isn't."
I could probably mention about 20 awsome deaths from Oz, but I won't because most of you probably didn't see the show.
The end of "Unforgiven" when Clint Eastwood just kills everyone in the Saloon that was wicked.
HAL the computer kiling that one guy was pretty good.

John Conner's step-father getting the blade put through his skull in "Terminator 2"
"Repeat, you shoot this man, you die next" Mr. White, Mr. Orange, Joe and Nice Guy Eddie dying in the massive face off in "Reivoir Dogs"
Mr. Blonde getting shoty about 6 times by Mr. Orange in "Reservior Dogs" was even better then the stand off.
Every death in "Pulp Fiction" was worth remembering.
"Your ass used to be beautiful" Robert DeNiro dying in Jakie Brown, was cool.
The guy getting his face ripped off in Scilence of the Lambs.
Gweneth Paltrow getting her head chopped off in "Seven"
