Adaptation is certainly one of my favorites. In fact, I would consider my favorite film not of the "epic" genre. The Godfather, Apocalypse Now, The Deer Hunter are some more favorites. But, in my eyes, nothing is even close to The Lord of the Rings. They're my absolute favorite movies.

My favorite is Harvey. And Adaptation sucks, that was a god awful movie and I wanted to shoot the main character by the end of it.

That's different, Kill Bill was intended as a single film whereas the Back To the Future films weren't.

Parts 2 and 3 were originally meant to be one film, but it would either have been ridiculously long or else would have had to cut out key elements of the story.

My favorite(s) are Eternal Sunshine, The Kill Bill movies, and I just bought Street Figher and Return of Street Fighter, so they will probably find their way onto the list, because I love the genre.

Adaptation is number one with Big Fish right on its heels. Garden State is flying up the list, and when I get the DVD (December 28, baby!), it might supplant Adaptation. I could spend a whole day watching A Knight's Tale, too.
