The Rock: Summerslam 1998 - 2001 when he broke out into Hollywood stardom vs Austin WM X7
Hulk Hogan: 1980's face and late 1990's heel
Kurt Angle - 2001 vs Austin - WM XIX vs Brock
Shawn Michaels: 1996-1997 feuding with Bret, Sid, Vader, Taker, Austin
Triple H: 1999-2001 feuding with Rock, Foley, and Austin. RR 2000 vs Foley was his greatest moment
Chris Jericho: 2000-2002 feud with HHH at Fully Loaded 2000 really put him on the map, not to mention his matches with Benoit

Hulk Hogan: Hulk has many different moments and primes IMO. First moment: WrestleMania III and the year until he lost the title to Andre. Second moment: WrestleMania VII, to WM VIII. Third moment was the nWo but he was way past his prime. Fourth moment: WrestleMania X8.
Kurt Angle: WrestleMania XIX, the months before and his return. Amazingly over.
Shawn Michaels: WrestleMania XII, defeating Bret the Hitman Hart
Triple H: moment: defeating Mankind, prime: 2000
Chris Jericho: Undisputed Title win, prime: 2000 IC title wars with Benoit

Austin: Austin VS McMahon, 1998 - that made him a star
The Rock: 2001 - he finally began to become recognised not just as a wrestling star, but also as some1 with movie star potential
Hulk Hogan: hmmm...probably about 1987, but also 1997 too, or whenever the height of NWO was at.
Kurt Angle: 2000 - he did it all! i could almost be inclined to say 1999 too, because that was when he was on his win streak.
Shawn Michaels: 1995 - I think that was the 60 minute iron man match...shawn was the man @ that time.
Triple H: 2000 - could almost say late 90's when he was running with DX, but around 2000, that was when he was the gaaaaaaammmmmmmmah.
Chris Jericho: 2001 - he won the title and had an important part to play in the inVasion angle.
Chris Benoit: I'm hoping benoit hasn't even hit his peak (altho it sees like he has :( ) anywayz, i'll say 2004
Eddie Guerrero: 2004, but similar sentiments as Chris Benoit.
The Undertaker: thats a tough 1. 1991 was when he won the title, and he was great then. But then in 1997 he was one of the main players in the WWE. One of those two years i'd say
