Hmm.. Stan Lee's cameo in Mallrats was some pretty funny shit
Also if they remake a film, pretty much any cameo from the stars of the original film are kinda cool to see, unless its corny. Or just plain "eh"?
Best one i can think of right now though is Chuck Norris and David hassle-mahoff in Dodgeball was pretty classic

Not a movie but a TV show. I'm going to say the Carl Weathers cameos in Arrested Development. Just hilarious stuff from a hilarious show.
