So many to choose from...

I'll be the first to say the most obvious:

Mankind & The Rock's "This is Your Life" - RAW, 1999 (2000?)

-A classic Mick Foley segment, made twice as good thanks to The Rock's comedic brilliance. One of the highest rated segments in the history of RAW, and easily one of the funniest. This is a prime example of the type of stuff we got from the golden age of 90's wrestling and Vince Russo.

Any of the Booker T & Goldust segments between 2001-2002 were also absolutely brilliant, as was their stuff with Chris Jericho and Christian.

I personally always liked the DX impersonation of the Nation of Domination. =\

-edit-

Also the 'freestyle' battle between Kurt and Cena on Smackdown.

This Is Your Life was actually THE highest rated segment in the history of Raw.

Right now, Kurt Angle singing "Sexy Kurt" keeps coming to mind.

Anything involving Goldust and Booker T. FUNNY, FUNNY stuff.
And the Chris Jericho debut on RAW had to be one of the craziest things ever. Just the bestest and perfectest debut of all time.

kurt angle and his milk truck. JR made that shit priceless.
Jericho debut

Alot of the Edge, Kurt and Christain stuff comes to mind.

For some reason I loved it during the Invasion when the Rock came out and rock bottomed both Shane and Vince and left the crowd wondering what he was going to do. I was a massive mark at the time and I loved it.

ECW takes the Invasion to the EXTREME! (before they joined WCW)

Fuck yes!

Anything involving E & C, Angle, and/or Foley. Every single thing they did was pure gold. A lot of my favorite wrestling memories came from them.

Sodas rule
So totally reeking of awesomeness
5 second poses
Christian losing weight in a chicken costume
KAZOO THEMES

Stating they were about to do a run in while on commentary, which led to them calling JR 'markish' was pretty funny.

On topic, both ECW invasions were great when they initially happened.

All of the Kane/ Undertaker segments leading up to WM XX. No idea how, seeing as Taker was absent from it all.

The Austin/Vince/Angle cowboy hat fiasco. Every time I think of that I hear 'We don't need no stinkin' badges!'

Goldust's return from when he was Dustin Runnels. "He is coming back!" Ah, how he preached that, and Val Venis came back with "I have come!" And then, Val Venis is in the ring, and Goldust's theme song hits, "I told you he's coming back!"

Jericho/The Rock on Raw or Smackdown (can't remember) before their number one contenders match.

Jericho: "Look at you with your uni-brow and your "Just Bring it!". Bring what? a vommit back? A fig newton? Or how about a Y2J telling you to SHUT THE HELL UP!

Also...

-The insane Al Snow/Hardcore Holly brawl that led out of the arena and into a body of water, I do believe. That was some crazy entertaining shit; probably the best thing Bob Holly will ever do in wrestling, which is very sad.

-On an edition of a '99 Nitro, Bret Hart was injured and went out to the ring to defend his US Title against Diamond Dallas Page, who had been trying to get a title shot for weeks. He comes out on the stage (this was the old WCW stage with the big W-C-W letters off to the side), and The Giant waylays him, smacks him around, then Chokeslams his ass through the stage, and leaves. Bret quips: "I guess DDP wins by DQ."
