I've seen it spelled both ways. What's the difference, if any, between the 2?

That's pretty much it. No difference in the actual matches, just the dialect they use or it's a way to make it fancy.

i think they add the e in royale overseas and keep it out here in the states

Battle Royale is when the match involves more than 10 non-American wrestlers.
