Although I don't know if I'd count it as a rest hold... but Bret Hart's Figure-Four around the ringpost was badass.
Someone needs to bring that back.

I wouldn't really consider the figure four around the ringpost a rest hold, though. It's more like a Tarantula-type move. Just something that furthers the story.
My favourite rest hold would probably be either the headscissors or body scissors. They logically would hurt, and it's obvious one guy gets a chance to rest his upper body, while the other guy is in pain. I'd really have to go with the headscissors.

Hogan's whole pulling off his weight-lifter's belt, whipping his opponent, getting it taken away, slipping out of the ring to put it back on, and then coming back into the ring always felt like a rest hold to me.
