If so, where and when? Try to make it spoiler free so I can try to find the event.

I think Shamrock left like right before Angle debuted on tv.

Shamrock had his last match on SmackDown before Unforgiven (September) 1999 and Angle had his first televised match on Survivor Series (November) 1999.

Way to say what I said using greater detail and an air of confidence.

Remember the rumours that they were going to do a program, hence the use of the Ankle Lock as a finisher?

Ken Shamrock would have just ended up bleeding internally.

You notice how often he injures himself in pro wrestling? I mean, he's one bad walk from being Kevin Nash.

In the story, wasn't it Jericho that put him out? Why didn't they save it for a post match beat down at the PPV? Was there a reason they did the angle right before a ppv?

If I remember correctly, Jericho and Shamrock were scheduled to have a match at the PPV, then Hughes (Jericho's bodyguard at the time) legit injured Shamrock, they played it off in a quick throw away match on SmackDown were Jericho have him internal bleeding. PPV arrived and Jericho fought X-Pac instead of Shamrock, because Kenny couldn't wrestle. No real reason was ever given as to why Pac of all people. Then the fallowing Monday Jericho started feuding with Chyna over a woman being a IC Champ, Pac continued with his tag team with Kane (who was in a six pack challenge at Unforgiven), and Ken never returned and ran out his contract so he could go back to MMA...and the whole mess was never mentioned again on TV.
That's how I remember it all going down.

Modern MMA is probably safer than pro wrestling.

Considering:
He makes more money for 30 seconds on his back than he does for more rigid touring
He's been injured a lot more in a wrestling ring than in MMA
He has more time to heal minor injuries before they become major, nagging injuries
Yeah, it probably actually is a smart move.
