Can someone find me an instance of someone taking the tag title soff themselves? Or basically being in the record books twice in a row?

None that I can recall, I know of a few times people defended them handicapped, but not anything like you are suggesting.

closest thing I can recall is Sunny managing 3 consecutive Tag Team Champions (Bodydonnas, Godwinns, and the Smokin' Gunns)

Lance Storm & Chief Morley
March 24, 2003 - Match 31, 2003
After William Regal suffered a an injury, Chief Morely had to strip Regal and Lance Storm of the World Tag Team Championship. Morley replaced Regal with himself to form the new World Tag Team Champions, Lance Storm & Chief Morley.
That's probably as close as you'll get.
Or basically being in the record books twice in a row?
HHH is in the World Heavyweight Championship records in back to back spots.
In 2004, HHH was stripped of the WHC when he was champ (due to a double finish I think) and then he won it in an Elimination Chamber match.

Im talking tag titles here though, Rhodes beat himself for the belt. That's a first right?
He defeated himself for the victory.

William Regal & Eugene were able to fend off Christian & Tyson Tomko at New Year's Revolution, but during the match Eugene suffered a serious knee injury. Eugene was no longer capable of competing, so Regal was forced to defend the titles against La Resistance by himself at a non-televised live event. Regal put up a valiant effort but Sylvain Grenier & Robert Conway were able to win their third World Tag Team Championship.
Not exactly what you were looking for but close also. Coach actually put himself in as Regal's partner if I'm not mistaken

Didn't the Giant and Sting win the belt and then fought each other for who holds the belts or something like that.
Sting and Giant were Tag Champions and Sting joined the Wolfpack so they fought one on one for ownership of the belts. Sting won and chose Kevin Nash.
So he didn't exactly win it from himself so much as he kicked Big Show off the team and replaced him with Nash.

don't think anybody else ever deliberately cost themselves the belts to join the person who won the belts to become a tag champ again.

an even better idea is...could you pin yourself to win the belts from yourself?
