Honorable mention: Close Encounters of the Third Kind. I have not seen Schindler's List, and that is probably the one film on his filmography that could supplant any of the three.

HM: Minority Report ---- I used to watch this movie all the time and I loved it. One of my favorite action movies of all time.

I have to name those 3 because they're just so goddamn awesome. Schindlers List is probably his greatest film, but isn't "fun". Therefore, I love it and I'm gripped by it, but I don't enjoy it per se. I've only seen it a few times, because it's not exactly a saturday afternoon pick me up.
Same with Saving Private Ryan.
Minority Report, Munich, Close Enoucnters, the other Indy movies, and Jurassic Park are epic as well.

I celebrate his entire catalogue.

I picked mine on the "awesome" criteria as well. Sci-fi/Adventure/Fantasy is hard to do without being hokey or too fantastic, but Spielberg does it well, probably because he learned his craft back before they could rely on the effects in the trailer to get people in the door. He does genre without being too over the top and still manages to give you characters instead of archetypes. His scores never leave a film feeling dated...I could go on, pretty much what Jeritron said, the whole catalogue is great and the measuring stick to what any other "big" film should aspire to be.
