first match that popped into my head was Foley/Rock when Foley won the Title

second would be Hogan/Goldberg followed by Luger/Hogan for the Title

Goldberg vs Raven for the US title was pretty great

Mysterio vs Juventud vs Psicosis vs Blitzkrieg for the Cruiserweight championship was unbelievable especially since Rey didn't win

Mankind/Steve Austin vs. Kane/Taker HIAC
I didn't see this live but have it on the Best of HIAC DVD. There was very little match but it was great story and action.

Rey Mysterio vs. Ric Flair for the WHC
Someone else won the lottery to face him that night and gave it to Rey. You knew there was no way Rey was going to win but the mark in you thought he could.

Sting won the belt off then one-day Champion DDP, only for Page to win it back later on in the night in a 4-way between themselves, Goldberg and Kevin Nash.

There was a pretty sweet match between a face HHH and a heel Rock at some point, not really sure when it was. HBM was the heel comissioner at the time tho.

Yea there were 2 of those. Both were great. One was a regular match for the title and Test did a run-in debut.
The next was an I Quit match, and Chyna swerved into the corportation.

Both were pretty great at the time. Haven't seen either lately

Cactus Jack, Too Cool, Rikishi and The Rock vs. Triple H, X-Pac & The Radicals (Benoit, Malenko and Saturn) was also a very good match.

Wow the days when the title could actually change hands on a weekly show. The IC belt was defended and used....

Seriously, cannot even comment. Too many good memories and there's great moments I can't remember too so I'd be in a wrong state of mind to comment.
