Ok, I really have no idea how this works so someone please explain.

The weight class ends at 265lbs, so if you're solid muscle in great shape and weight 275lbs you can't fight in ufc?

Also the articile on the front page here said Lesner and the guy he's gonna fight both weigh around 295 and cut down to 265lbs...

So, does these guys just carry around 30lbs of fat or do they drop 30lbs of muscle?

someone explain all this please/thank you.

its fat and water. They cut down their food intake and dehydrate.

Yes if you weigh in over 265, you would be missing weight and if your opponent decided that was unacceptable, you would not be allowed to fight. Its just like any other weight class where people cut down. Just because they cut 30 lbs doesnt mean they have all that extra fat on them to do it such as carwin and lesnar. Lesnar and carwin are pretty much all muscle but they are so big that a 20 lb cut in water weight is not going to affect them anywhere near as bad as it would in a lower weight class. Carwin especially has almost no body fat for a heavyweight.

Plus, most dudes over the 265 mark are fat, sloppy fighters with little skill and just lay on you the whole time. That said, it means legit fighters who happen to be bigger than 265 (basically just Lesnar and Carwin) have to cut down because there is no superheavy division in the big MMA leagues in the west. This is because really big guys gas and can't move very much, which = boring. So it's cut weight or don't fight at all for them.
