I didn't both with a lot of TNA guys, because guys like AJ Styles and Desmond Wolfe I'd like to see face all the other great wrestlers in WWE.
Never was a big fan of Sting, but I'd love to have seen him square off with WWE guys from his time (Undertaker, HBK, HHH, Rock, Austin, etc.)

Tag matches is a whole other can of worms. There are obviously infinite possibilities for great dream tag matches, so I'll keep this short...

Samoa Joe vs. John Cena was mentioned and I have to agree. Joe is the perfect guy for Cena to work with, I could see them having great matches.

If Joe ever left TNA for the E, I would book him against Cena right off the bat.

Cena has great matches with very violent people. (this is also assuming we are getting Joe circa 2005 when he gave a shit, not Joe of today.)

Cuz you know Cena is never leaving the E.
