The 25th anniversary of Wrestlemania was Wrestlemania 26....as Wrestlemania 26 took place 25 years after the first Wrestlemania. By WWE's logic, if WM 25 is the 25th anniversary, then WM 1 was the first anniversary.

I believe you are right, but on the opposing side, Paul Orndorff main evented WrestleMania I and then curtain jerked WrestleMania II.
