Is Edge's Rob Zombie theme and the nWo porn music dubbed out of the original World Wrestling Federation release of the event?

Yes. Both were. Licensing reasons. I noticed it too.

I have the X-8 DVD and the nWo music is there... Zombie isn't though

Did Hogan come out to "Voodoo Child," or the porn music?

Whoops. Well, in the WrestleMania Anthology boxed set, the nWo music, Undertaker's "American Bad Ass" and "Rollin'" themes, and Edge's Rob Zombie themes are all edited out and replaced with other themes (generic rock music, 'Taker's old Ministry theme, and Edge's "You Think You Know Me" theme).

What about when Limp Bizkit actually did "Rollin" live for the Taker?

Which Mania was that? I'll go check. But so far, live performances have been kept intact in the Anthology sets.

That was WM 19. Drowning Pool and Saliva's live performances were still in the WM 18 disc of the 'mania Anthology set.
