People who "switched" instruments...
 
For example, Sully Erna (Godsmack) Used to be a drummer (Meliah Rage).

Any interesting / unusual changes?

Back when I saw Metallica (Black album tour) James Hetfield played drums in a "battle" against Lars Ulrich...

Rev. Run from RUN DMC got on Jam Master Jay's turntables when I saw them..

I dunno..

Guster had a thing on stage where everyone played an instrument they had never previuosly played (In Guster). It was weird.

All the changeovers I know of are pretty dull bass to guitar (or vice versa) swaps...

When I saw them live, Sully got on the drums and did a solo, he is really good actually. I also hear that the first Godsmack album was him playing all the instruments, but I might be wrong..

Don't forget drums for Tenacious D.

Anyways, I believe Kurt Cobain played drums when Nirvana was just getting started.
