For Smackdown, I'll have to go with Benoit (I know he's on Raw now, but he spent most of the month on Smackdown). Good showing at the Royal Rumble, entetaining feud with Heyman, really looks to be getting over big time.
Definatly gotta say Orton for Raw. Had a a really good match with RVD to start the month, good outing at the Rumble, and his Legend Killer stuff with Foley has been the highlight of Raw for me.
