Soul Calibur III
This is definitely THE best fighter of the year, at least until Dead or Alive 4 comes out. This game has almost everything, a good arcade mode to get the basic story. A full on story mode called Chronicles of the Sword, World Competition and Soul Arena. It also has character creation and you have the ability to change the default characters' costume colours.
