There are Roman things in Zelda games as well but the Celtic stuff stands out more to me.
The Deku Tree and Zoras connections can fir both into Roman mythology (Which you've already noticed a connection to anyway), several Native tribes, Norse mthology, and I think both exist in Japanese folklore.

Zelda also has many persian influences, as well as Indian. And probably DOZENS of others.

So remind me again...Why would he be Scottish?
