Okay, for my UI, I have the following:
X-Perl Raid/Unit Frames (customisable raid/party/character/target/target's target frames)
Bartender 4 (customisable action bars/key binds/shapes/setups)
Parrot (combat text/damage/heals/loot/cooldowns)
TitanPanel (bar at the top, link in previous post)
Omen (threat meter, less important since the introduction of the in-built threat meter but still a really useful addon)
Gatherer and Quest Helper

And a few other class-specific tricks and treats. I'd really recommend customising your interface as much as possible because a) the standard Blizz interface is awful and b) you'll find things much, much easier. I don't even know how I used to play without them.
