The 'novelty' of watching a Taker match at Wrestlemania, is atleast BELIEVING in the idea that his streak might actually end....or is actually in danger.

Cena as an opponent would have delivered that. Now however, Cena doesn't have that aura of invincibilty. If Cena fought Taker now, most people would believe well in advance that he'd have no chance.
