Have one bassist establish the roots/pedal tones/whatever structure you're going for, and use another one for melodic intervals.

Word to that. I'm trying to convince my friends to adopt the concept of two bass players in our future jam sessions, mostly because with my 6-string bass I have more versetility in leading the other instruments. A second bass can carry a simple groove that's based on the roots of the guitarwork... and we are playing metal/hardcore. They don't realize how awesome this could sound.
