Star Wars is, at its very core, a Samurai flick. There's probably some in-Universe reasons to justify it, but since the Jedi are a Samurai analogue, it makes sense that the use of the Katana analogue would be similar. It's worth noting that a Katana takes specific training to wield effectively, so this may be the "in universe" reason as well. Though a blade made of pure light wouldn't really need special training to sever an arm at the joint like the real-world equivalent does.
