Really torn here between "Ass Man" and "I Got It All" right now. Of course, the Ass Man theme is icon by any measure. It's tune is known worldwide and synonymous with knowledge that you were going to see Billy Gunn hit the Fame-Ass-Er and see the crowd light up with delight as the greatest wrestler of the era brought home another hard fought victory. However, "I Got It All" is a genuine incredible theme in it's own right - not only because it was THE ONE Billy Gunn's music, but because the music itself was enjoyable (and perhaps a little more child friendly than loving "to love 'em.")

Either way, it's win-win. I'm going to reflect on this long and hard, but I will get back to you all with an answer shortly.
