Just play based off what you have. Say you have 4 6's, start with that as your opening bet. More than likely the AI will call a bluff and get caught with a true bet and lose a die. Keep doing this until the AI has 2 die left. Reading them from there is easy as they always try to bluff and if you have more die, you know what's really in play.
