You're just guessing how many dice of a certain kind you think are on the whole table. If you're unsure about something, you can just up the bet yourself to something you're more positive about, or you can call their bluff if you think there's less than that (if there's more than that, the bet was good). If you bet a higher number, or more dice, you just keep it going.. Pretty fun game, especially with more people.. I've only ever had 2 NPCs at the table though.
