This is pretty tough.
Kane: The feud had a very interesting backstory, and was written perfectly for WrestleMania 14. Their history got kinda fuzzy, but they always kept relevant with one another, and also drew fan interest, whether they were fighting or teaming. The match quality for the two of them hasn't been amazing, but it's been good. My favorite match of theirs has gotta be WrestleMania 14.
Mankind: Classic matches, which of course includes the HIAC. I think what makes the Mankind feud different is that the feud was based off Mankind having Taker's number for being so unorthodox.
HBK: They had 3 great matches with one another in the 90s, including the first (and best) HIAC. Then they go on to each getting "legendary" status, and gain so much interest for their Mania 25 match, which was so successful and perfect, that they had to cash in the very next year, and it delivered.
Given that, I'd have to say that I personally enjoyed the HBK/Taker series the most.
EDIT: Yeah, I gotta agree that Edge deserves a mention. That feud was booked perfectly and the matches were great. Oh yeah, and Taker/Bats was good.
