A few of the ones I remember fondly:

Scott Steiner's "I don't have 30 days and 30 nights for your wife" in his feud with DDP over Kimberly.

Piper's "Powers to be" promo in his last WCW appearance.

In fact, just about anything of Piper's, actually.

"Cane Dewey" (I know, I know... everyone considers this legendary)

Both "ARMBAR" and "I've beaten everybody" by Jericho

...and, of course, the "wrestling is a dirty word" worked shoot Heyman did on Vince McMahon, mainly because you KNEW he meant most of it.

Honorable mention: Buff Bagwell's "I'm the chosen one" backstage interview... only because he was cut short with a guitar shot to the head by who would be the real "Chosen One", a returning Jeff Jarrett.
