Don't know much about Lucha, but from what I can tell, the main difference is pacing and selling. Lucha is faster paced with less selling, and they make a pretty huge deal about dives.

As far as Japanese wrestling goes, it really depends on the style (Kings Road or Strong Style.) King's Road is stiffer, and used to be about two guys slowly building up to a finish (Ie, things would get more intense). Also, they learned more from their matches, so as people fought more, you'd see more reversals and counters, more kick outs, etc. However, King's Road has been bastardized, and is now responsible for your typical indy "we're going to kick the shit out of each other and drop each other on our heads, do our finishers 7 times, have a series of nearfalls/reverals, and then another finisher." So to go to WWE style would mean being less stiff, and really also working a different pace.

Strong Style is really the closest to WWE. Except traditionally, Strong Style also had more submissions, and more strikes. Probably the easiest to adapt from though. Honestly, Yoshi Tatsu and Daniel Bryan aren't that far away from Strong Style.
