A good thought. Seeing as how they're moving forward with the First Class cast for future movies, and Wolverine will have a third movie, he could potentially rewrite his own history. But Stryker is not the only man who could do this to Wolverine.

Quite simply; they lacked the tech and story requirements to use Sentinels in the original trilogy. Just something we gotta roll with. Or maybe the original trilogy is the results of this coming storyline. When it comes to time travel stories, maybe best not to think about it too much.
