People sign on for multi film deals all the time, it's no guarantee for an actor or studio to see that through nowadays.
Andy Garfield as Spider-Man and Karl Urban as Judge Dredd Are examples.
I'm not saying they wouldn't do it but the third one was a bit of a production nightmare from what I've heard and it underperformed so they may shelf a further film.
