What is even the point of the money in the bank briefcase if you're gonna announce the cash in ahead of time to set up a match?

Kayfabe, anyone can get a match for the championship, by ambushing the champ with a beatdown, ala Dolph/Kofi or a billion other title feuds over the years.

The whole point is to have a surprise cash in at a time where the champ is vulnerable and not expecting a match.

Sure RVD announced his cash in ahead of time, but that was a unique circumstance that made sense at the time. None of that here with Lesnar.
