To answer the question, though, FF7 is the only one of the series that I've finished, because it was the only one that hooked me. I started playing 8, but it took too long to get to the story, and the characters didn't interest me enough to warrant waiting around. Nine was fun, as was ten, but neither one could keep me occupied for more than a couple of hours.
I just got III on emulator, but haven't had much of a chance to play it, so my opinion may change.
As of now, though, FFVII is easily my choice. The characters were all well-defined (a must for me in a game), the gameplay was easily accessible but deep enough to warrant experimentation, the story was phenomenal, and for a PS1 game of its time it was very impressive graphically.
For me, though, it doesn't get any cooler than playing a couple of hours into the game, thinking you know what your mission for the game is, then having a
massive swerve thrown at you in Shinra headquarters.
