I don't mean to spoil the mood, but I don't think Hardy winning the match would have been a good decision.

Hardy was released because of his natural attitude. I doubt winning the Undisputed Championship would have changed that, in fact it probably would have made him more of a sloth when it comes to showing up for shows.

I think the match served its purpose in getting over Hardy, and having Taker make an out of character title defense. Hardy vs. Taker wouldn't have been nearly as good if we couldn't smell the Jeff title win, and a Ladder Match let us do that.
