On PS3/360, the level cap is 72, and IIRC includes the original version of Digistruct Peak (the one with 8 courses). Normal Mode caps out at around lv. 30 enemy wise, True Vault Hunter Mode around lv. 50, and UVHM with no overpower levels around lv. 72. Oh, and you unlock TVHM by completing the final story mission of the main game on Normal Mode and UVHM by doing the same on UVHM.

Once you hit lv. 72, you can run Digistruct Peak and each time you run through it successfully on your current OP level, you gain an OP level, so if you set your game to OP7 and that's your highest OP level, running the peak and successfully completing it on OP7 would unlock OP8. Since PS3/360 didn't receive the new DLC, I assume OP8 is as high as you can OP - there's no OP9 or OP10.

You can keep whatever weapons and gear, but as time goes on and you find better stuff, it goes without saying you'll eventually be selling your old crap in favor of the better stuff although some stuff, like an Unkempt Harold will last you way longer than other stuff.

The game doesn't track everything you've ever obtained, at least in name/rarity/level, etc. It tracks challenges based on how many white (common) - legendary (orange) items you pick up but only to a very limited degree. Your inventory in your backpack does automatically sort your stuff by rarity.
