I think it's pretty obvious and hopeful that he'd just be Mickey Rourke.

It fits great with Jericho's character to find something about him portraying a pro-wrestler offensive, and him being jealous and disgusted with his comeback.
Jericho pretending to be sticking up for some righteous cause, while in reality just being an asshole makes perfect sense.
He can try to destroy Mickey Rourke on WWE tv and then Mickey decides to call him out and they fued til a mania match.

It'd even be nice to see Mickey training with Malenko or Piper or somebody in the lead up.
