I think the lateste norton ghost is alright for its built in backup. Don't think you need to do whole disks either.
Do you have a tape drive? Or what are you backing up to?

Backupexec is really where it's at. It's king. But might be a bit excessive and not the most user friendly (not too bad, but it's still proper backup software, it's what I recommend and use for server backups)
