Wade Barrett seemed like the logical choice to face Undertaker. It turns out he was just going to be a Triple H lackey, but Trips didn't want to turn heel yet so the plan was scrapped altogether. It may not have been a "better match," but it would have been much more interesting than Triple H playing smoke and mirrors catch-up to try and follow Shawn.

CM Punk had a fairly quiet 2010 compared to his 2009, but he would have been a lot more fun for Taker too. John Cena was there. Hell, John Morrison, while not exactly a major, major player at the time still had an amazing 2010 where he was having the match of the night at every PPV. Triple H was boring as fuck around this period (2002-present).
