Mine would be Jimmy Coderas randomly doing a cartwheel during a match at a houseshow. The story goes that stone cold used to tell referee's to do stupid shit via their earpiece during matches.

Any time referee Jim Molineaux slammed or suplexed anyone in ECW.

I forget the exact match in ECW but four heels were in the Tree of Woe and only three faces in the ring. They gave Molineaux a chair and he did a dropkick with a chair with the rest of the faces. Pretty damn funny.
