Sheffield is having surgery soon I believe. I think a lot depends on when he comes back from that, if he misses a lot of time you have to assume the Yankees won't resign him, especially if Melky continues to play well.
I think he'll miss quite a bit of time though, but even if he doesn't and Melky continues playing well it seems useless to resign him. I would definitely rather see Melky out there next year in right, so the only spot for Sheff would be DH. But we also have Giambi, Damon and probably Matsui that are going to need DH days. He would also be quite an expensive DH.
