Am I fucking something up here, cause I can't remember/figure out how the NFC and AFC stayed even in all that.. Did the divisional changes have something to do with it??

Well I believe at one point each division had 5 teams (the old ones) except the AFC Central had 6 teams. Then when the Texans joined the AFC, Seattle entered the NFC and there were 4 teams to the new divisions.
