Let me add another post to my count by answering this thread:

1) Taker-Mankind (1995-1997'ish)
2) Taker-Kane (Round 1 1997-1998, round 2 2010-???)
3) Taker-Flair (2002)

I want to add Taker-Edge, Taker-Angle and Taker-Batista but they are just honourable mentions.

The Undertaker-Mankind feud lasted from 1996-1998.

The Undertaker-Kane feud lasted three rounds (1st: 1997-1999, 2nd: 2003-2004, 3rd: 2010-present)

And my favorite Undertaker feud was with Hulk Hogan back in 1991.
