Varitek would be a good move if the Mets intend to use him to help develop their younger pitchers but even then he'd only be really useable for just a single pitcher or two as a max.

He helped a lot in making Lester and Buchholz good as pitchers for the Red Sox.

Come to think, if the Mets want to go the veteran catcher route - I'd go with Pudge. He's still respectable against lefties and even at his age there is no better guy to have mentor a young catcher and help a pitching staff. He'd probably get just as much playing time as he'd get elsewhere at this point, which is probably important to him if he wants to have any shot at reaching 3,000 hits.
