I've actually started working on my Enchanting a bit finally, and I kinda like it. All those useless green items I find, I just disenchant (which boosts the skill), then I use the reagents from that to enchant other things. Right now my skill is only like 10 so I can't do much with it, but in time.

My tailoring is coming along nicely though.

Anyways, to cancel a profession, open your character screen (C), then go to the Skills tab. Once in there, just highlight the profession, and there will be a little 'cancel' button near the bottom (the circle with the line through it). It's kinda small, but you should see it.
