Excluding the ones that are sort of universally held up as series apexes (IE Pine Barrens, College, Long Term Parking, etc), I'd go with Join The Club/Mayham, if only for the brilliant dream sequences, and Proshai, Livushka.

The dream sequence episode where all the dead people are in his dream was incredible to me. "The Test Dream." Really love all the episodes with prolonged dream sequences.
